On 15 Aug 2013, an exhibition displaying vinegar making tech is held in Donghu Vinegar Garden, Taiyuan (the capital city of north China's Shanxi Province). Donghu Vinegar Garden is a theme museum displaying a unique technology of making Shanxi mature vinegar. On the exhibition, visitors could get to know about the raw materials used to make mature vintage.
Shanxi mature vinegar is made from sorghum, barley and other raw materials. With over 3,000 years of history, Shanxi mature vinegar is reputed as one of the four famous vinegar of China. The whole making process of such vinegar is of purely natural fermentation without any chemical catalysts.
