For tourists and visitors travel to Luoyang, the two most renowned cuisines are the 24-course Water Banquet and Carp Jumping over the Dragon Gate. And for local people, snacks and foods which play important role in daily life include Tangmian Jiao (Steamed Dumplings), beef soup, and mutton soup.
Luoyang Water Banquet
Luoyang Water Banquet has a history of thousands of years. The dish was so named for two reasons. Firstly, unlike the usual custom in China, the dishes served during this banquet are brought one after another, like water flowing, hence it given the name "Water Banquet". The second reason is that around one third dishes of the banquet are soup or semi-soup dishes.
Although the cooking methods of Water Banquets vary from one restaurant to another, you may be assured that carp is used a lot. The banquet is noted for its various soups with sour and spicy flavors. There are 24 courses in the banquet in total. The first course named "Luoyang swallow dish" is made of turnip, shreds, minced pork and other vegetables.
Carp Jumping over the Gorge
Carp is one of the most beloved foods of Luoyang people. It is said that in the most prosperous old time of Luoyang, when the capital was swathed in mystery and paved with gold, one carp costs even equally the same as a whole ox! Carp is favored for the tender flesh, nutritional benefits and the stylish design of each dish.
The most famous carp dish of Luoyang is Carp Jumping over the Gorge. The dish is not only famous as a tasty dish, but also acts as a lucky sign for young people. The carp, with its head held high above the plate, is masterfully placed, seeming to be leaping over the cabbage "gorge" at the side of the plate, a symbol of competitive spirit.
Luoyang Tangmian Jiao (a kind of steamed dumplings) is made to the shape of crescent moon. Tangmian Jiao is originated in Luoyang Area and is now gets popular in the northern China. Tangmian Jiao features thin wrappings and jade-like color.
Mutton soup and beef soup
Mutton soup and beef soup play an important role in Luoyang local life. A bowl of mutton soup or beef soup with pancakes or steamed dumplings are the commonest meal for local life. Luoyang Mutton soup and beef soup feature fresh and tender meat, delicate flavor and nutritious.
